I had a brain wave this morning…. my husband asked what I would like for dinner tonight. Jerk chicken on the BBQ with mash potato, green beans and a sweet curry sauce.
Ingredients
1 cup cloudy apple juice unsweetened
1/3 cup caster sugar
1 1/2 tsp curry powder
300ml thickened cooking cream
1/4 tsp salt
2 tsp lime juice
1 granny smith apple pealed and diced
Curry Powder
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp garam marsala
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground ginger
1/4 tsp chilli powder
1/4 tsp kashmiri chilli powder
Instructions
In a small pot bring the apple juice and sugar to the boil. Then turn down to a simmer and reduce to 1/2.
Add the cream and curry, return to a simmer and reduce by 1/2 again.
Add the salt, lime and apple. Cook for 10 mins.
Serving
Serve with Dry Jerk rub BBQ chicken and vegetables or pork.
