Spicy Maple Ribs

My husband started playing the other day…he decided he wanted to make some spicy fruity sweet ribs. This is what we came up with….

Ingredients

1 kg pork short ribs cut into sections
1 tbsp olive oil
2 medium onions roughly chopped
5 cloves Garlic minced
3 cm fresh ginger chopped into fine slithers
1 red large chilli de-seeded and finely sliced
1 green large chilli de-seeded and finely sliced
1 tsp sweet paprika
1 tsp ground cumin
1 tsp onion powder
1 tsp garlic powder
1/2 tsp ground ginger
1/2 tsp Kashmiri chilli powder
1/4 tsp ground cloves
1/4 tsp ground cinnamon
2 tbsp beef stock powder
1 star anise
3 bay leaves
3 kafir lime leaves
1 punnet cherry tomatoes halved
3 nectarines diced (or 1/2 fresh pineapple in chunks)
1/2 cup maple syrup
1 lime juiced

Serve with boiled potatoes, mash or rice.

Instructions

Turn your pressure cooker onto  sear and heat the oil. Add the onions, garlic, ginger, chilli and fry till soft.

Add the spice mix including the bay leaves and kafir lime leaves and mix into the onion mix. Add the ribs and brown for 5 minutes.

Add the tomatoes, nectarines, lime juice, maple syrup and stir.

Switch the pressure cooker over to pressure cook and set to lamb shanks or casserole for 40 minutes.

Close and have a glass of wine or 2.

When the pressure cooker is ready, open the lid and let the sauce reduce while making the mash.
