To complete the dashi story, here is a recipe for Miso soup.
Ingredients
4 cups dashi (1 per person)
4 tbsp miso paste (check for gluten free variety, reduce miso for less salt)
200 g silken tofu or soft tofu (50g per person)
4 tsp. dried wakame soaked in water for 10 mins
1 green onion finely sliced
Instructions
Heat your dashi in a pot, and turn down to a slow simmer, add table spoon by table spoon the miso paste, disolving each before adding the next. You can use a ladle and blend with the dashi.
Cut the tofu in to 1 cm cubes and add to the soup.
Serving
Drain the wakeme and share it and the green onion between the bowls.
Ladle the soup into each bowl and serve.
