I am a huge believer in freezing left overs, so many times I used to throw out mouldy food from the fridge having put it there thinking we would eat it in the next couple of days.
Having a daughter with intolerances and me with low salt requirements, this gets around the packaged freezer meals.
One extra meal of leftovers is ok during the week but any more becomes boring, only put in the fridge one meal and freeze the rest. General rule is to only reheat meals once.
I now freeze in server size portions that can be pulled out as after school snacks, lunch bentos or dinner for one. I actually grab a bag or 2 (if I need some rice) out of the freezer and they defrost by lunch time, ready to heat and eat.
Freeze serves of rice as well, we always cook too much.
Remember to label the packs with date and what’s inside, the snack bags start looking the same once frozen. Unless you like pot luck, like I do….
