Char Siu Sauce Gluten Free

This sauce is fabulous for marinading your meat, be it pork, duck or chicken ready for the BBQ. Traditionally it doesn’t contain the red food colouring we are used to seeing with the BBQ meats hanging in the Asian BBQ shop windows.

Ingredients

2 tbsp low sodium soy sauce – see Substitute Soy Sauce

1 tbsp oyster sauce

1 tbsp hoisin sauce – leave out for GF

1 tbsp Shaoxing wine/dry sherry – if absolute GF required use the dry sherry

3 tbsp castor sugar

1 tsp garlic, minced

1/4 cup honey

1/4 tsp five-spice powder

1/8 tsp white pepper

2 tbsp water

1 tsp red food colouring (optional)

Instructions

Mix all ingredients in a small pot and heat medium-low. Keep on stirring until the sugar is completely dissolved.

Remove and cool to room temperature.

Ready for using as a marinade.

Storage

You can also refrigerate the char siu sauce in a sealed bottle if not used at once.
